Pounded Tea

The pounded tea is made by grinding and cooking the materials such as the raw tea leaves,raw rice, and raw ginger (known as "three raw materials"). It is popular in Hunan, Hubei, Jiangxi, Fujian, Guangxi, Sichuan, and Guizhou provinces. In addition to the three raw materials, other condiments can be added based on the tastes and habits of different drinkers. These condiments include sesame, peanut, com, salt, and sugar. For example, the Anhua Pounded Tea is made of peanut, coarse rice, soya bean, sesame, mung bean, pumpkin seed, and tea leaves, with small amount of raw ginger, pepper, and salt. All these materials are fried, ground in a mortar, and put in boiling water. The soup is stirred evenly and cooked for a while. Then, the tea is ready.
