Mint Tea, YIELDS 300 ML (1 1/4 CUPS)

1 1/2 teaspoons (7 ml) organic Chinese gunpowder green tea
1 teaspoon (5 ml) granulated sugar
1 large bunch fresh mint
1 1/4 cups (300 ml) water

1. Heat a glass teapot.

2. Place the mint in the teapot and add the sugar

3. Place the tea in a tea strainer and rinse with boiling water. Place the strainer in the teapot and add the boiling water.

4. Allow to infuse for 3 minutes, 4 minutes for a more full-bodied tea, then remove the strainer.

Note: As a variation, the leaves can be placed directly in the teapot without the use of a strainer. This method allows the tea to get stronger as it infuses.
